Holy- Balls, buckets, crap, guacamole, moley, Spicolli, sheet man! These burgers are AMAZING! I made Veggie burgers...me..that's right! I'm really getting over being skeptical of this healthy eating stuff and jumping right in huh? So it kinda happened by accident. I bought lentils (on purpose)-but I jacked up cooking them...b/c well, I kinda forgot I was cooking them..so they overcooked..turned to mush. Boo. I didn't want to throw them out, but I didn't want to eat them as they were. They were basically half perfect and half mush. Product of my forgetting them and forgetting to stir them so they'd all cook evenly I guess. *shrugs* Burgers popped into my head...but how does someone MAKE a veggie burger? I don't even BUY them for fear they will suck. What? It's the truth! So I looked through recipes online and there is no 'set' recipe. Just make them stick together. Dredge them, don't dredge them. Beans, herbs, cumin, onions, lentils..it's a pretty varied thing. I can do this-after all, I have mushy lentils! My messed up lentils were 1 cup of brown lentils cooked in 2 cups of beef broth (from a roast my Dad made earlier in the week) and 2 cups of water...so my lentils (albeit mush) had a nice beefy flavor already. I put them in a pan and let them cool and added the following- 1/2 onion, diced 1/2 zucchini, shredded and squeezed dry I cooked the onion and zuc in about a Tablespoon of olive oil until they were just getting soft- 2 eggs-beaten 1/4 cup unseasoned breadcrumbs 1/4 cup wheat bran 1/2 cup shredded cheddar cheese 1 t cumin I mixed it up and molded the burgers with a 4 inch egg ring onto waxed paper and into the freezer. It made 7 burgers... there are 6 in the freezer and one in my belly. I fried it in a pan with butter-what? who said that? I did...butter...seriously..a little to fry a burger won't hurt too bad! I put the burger on the 100% whole wheat bun (there's that healthy monster again) w/a healthy dose of Miracle Whip *snickers*, some spicy mustard, and some lettuce-for crunch. SO good. Seriously...alot of recipes coated their burgers in breadcrumbs, but I LOVED the crunchy cheese/lentils 'coating' it got from pan frying it. Will I give up beef? No...but are these a GREAT alternative? Yes, hells yes!
I'm still on my GM kick. It's been my breakfast EVERY day this week. I'm thinking I should celebrate that..but I'm not totally sure. :) This one though...I might have found my match for a little while. I feel a bit like a crazy inventor, trying up different concoctions, and some of the GMs I've made I've enjoyed, some I've just liked, and some I won't make again. Keep in mind it's not the spinach's fault b/c you can't taste it..I just messed up the consistency (to thick) on some. I've also added Amazing Grass to some and I'm not quite used to it's flavor yet. But this GM. LOVE it. It's been the breakfast 2 out of the 7 so far. :) 1 frozen banana 1 cinnamon apple sauce (the little container, I'm gonna guess it's about 1/2 cup?) 1 t honey dash of cinnamon milk 2 handfuls of baby spinach. Yum. Again, I say YUM. That and half of my daughter's oatmeal and I'm 'full as a tick' (ew, I hate that saying, but my Dad uses it all the time-he's from Arkansas).

So here we are on the 'trying to eat more healthfully' trip still... I LOVE sweet potatoes. LOVE them. *note to self to google them to see how good they really are for you* As much as I love them around Thanksgiving and Christmas with pecans and marshmellows all over them..I also think that a certain spice is their savory best friend-CUMIN. The two of them together is just wonderful to me. Into a saute pan-about 2 T of olive oil 2 cups frozen roasted sweet potatoes* 1/2 of a chopped zucchini 1/2 of a chopped onion * I buy the bags of sweet potatoes from Schwan's, but I think that if you'd want to par cook a sweet potato in the microwave, or peel it and boil it first you'd get the same deal * once it all gets cozy and cooked add in about 1 tsp of cumin, and some salt and pepper. Yummy yummy veggie side dish, done! For the chicken...I'm recently converted to a VERY easy way of breading. No egg wash, no milk wash. No wet pan, no dredging. So how is it possible? Cooking spray...that's how. Chicken tenders-sprayed liberally with cooking spray (butter flavored)-then pat the breadcrumbs onto them. Honestly...this breading sticks better than ANY big steps breading I've ever done. Pop the breaded tenders on a parchment lined baking sheet and put them in the oven at 350 for about 25 minutes. I just used plain breadcrumbs that I spiked with some seasoning salt and garlic. Easy peasy, and pretty healthy too!

So in my quest to eat healthier/lose weight..I broke out my JLPJ
If the websites I'm checking are correct this 16oz glass of juice that I drank this morning has 7 servings of my fruits/veggies for the day..so that means..I'm done with that part of the pyramid!
2 large apples
1 inch of ginger
='s 4 cups of juicey goodness! I've drank 2 so far...I'm eager to guzzle the other 2, but I'm not sure if that would be/will be smart for my gastrointestial system.
One thing that I think is important to mention that I've found about the Green Monsters and Juicing. The natural happy and the natural energy I get are just awesome. I did Green Monsters for about 3 days, then I skipped for a few days and I noticed a HUGE dip in my energy/happy level (='s pissy and tired).
I haven't been at this long enough to show a weight drop or totally clear skin. My hair and nails are still good b/c I'm still taking prenatals since I'm breastfeeding Baby #2. So I'll let you know when/if I see big changes!

Ok..lame blog title..but this meal really WAS quite good! We're massive carinivores at our house and this doesn't have one bit of meat! olive oil/butter cremini mushrooms zucchini sun dried tomatoes onions baby spinach tomato basil fettucini mozzarella salt/pepper YUM. Chop the veggies however you want to. I'm a fan of quartering the onion, and halving the zuc so you can get the little 1/2 moon shapes. Into a saute pan goes about 2T each of butter and olive oil-then this order Onions (for a couple minutes) Mushrooms (ditto) Zucs (again) turn off the heat and toss in your baby spinach and your sun dried tomatoes. The sdts in this dish were really an after thought...and that thought was "it needs something else..some 'bite' "..I had about 2 T in the jar in the fridge so in it went. Have you been cooking your pasta while you cooked your veggies? I hope so! The juice from the cooking veggies + whatever is left of the butter/olive oil makes a nice little saucy-wetness for the pasta. I topped with diced mozz...it was just a nice little change from shredded pre-packaged! Delicious. SO summery and delicious!

Before I got pg w/Baby #2 I'd planned on getting healthy, lose some weight, THEN get pg..well..didn't happen that way. While I was pg with #2 I stumbled upon some really great websites that are all about healthy eating, good body image and just wonderful women that write them, and I got hooked! I knew that I couldn't really mess with my diet too much while I was pregnant..and yes I used it as my "this is my last time being pregnant, this is my last time to go crazy with my diet" excuse..that was bad..but it was the last time. I was 6mo pg when it was New Year's resolution time, so I opted for a May resolution time. Nothing major..although my ultimate goal is to lose about 80lbs..mainly just eating a better diet..a HEALTHIER diet...with some cupcakes thrown in for good measure. :) Something that I noticed on these healthy sites, but wrinkled my nose at was "the green monster"....really..you kidding? A smoothie with SPINACH in it? Blech, yuck! No way..NOT ME! They all talked about how they were so good, and so addictive, and gave them so much energy. Wait, rewind "says my Mother of a toddler and an infant mind" ENERGY??? I need energy. I need LOTS of energy..I'll happily gag down whatever weirdo concoction I need to if I have more energy to keep up with my two babies.... So I visited Green Monster Movement and looked at the recipes. And it got less scary... I had some baby spinach in the fridge that was needing to either be used, or be pitched..so I decided to jump into the movement. And now...I'm in love! Honesty (which is the best policy right?)-I don't taste the spinach AT ALL. And energy...it's not like a huge buzz like when you down 3 cups of coffee..it's a natural energy that, I'll admit I've never had before b/c I've never really focused on trying to eat healthy. Don't be scared of the Green Monster..it's DELICIOUS! Here are two that I've made... Here (above) is my "Blue-Green" monster- 1/2 cup frozen blueberries 1 banana 1 container of low fat banana creme pie yogurt 1/4 cup 2% milk 2 cups baby spinach (washed) 1/4 cup wheat bran about 5 ice cubes And here...aaahh..look at that crazy Shrek hue! I'm not exactly sure what to call this one...b/c it's just green..but I'm not sure if there is an 'original' green monster or just the addition of spinach makes it green..either way...let's call this my Virgin Green b/c it was the first one I made- 1/2 cup frozen banana 1 container low fat peach yogurt
2 cups baby spinach (washed)
1/2 cup fresh goat's milk
Little things I know/I've learned/I'm doing-
-on the latest trip to the grocery store I stocked up on banana b/c I like to cut it up and freeze it, then stick it in little baggies in the fridge. For the Virgin Green I didn't even use ice b/c the frozen banana gave me the icy texture I needed/wanted..and frozen banana also gives it an awesome creamy texture..kinda like ice cream!
-also on the last trip to the g.s. I hit up the yogurt sale...yogurt has a good shelf life and come in all sorts of yummy flavors. I'm not a huge yogurt on it's own fan. In fact I can't just eat it straight...I love to use it as a sub for milk in cereal though, and now as a good flavor booster in my GM's!
-for the Blue-Green..you'll notice I used Wheat Bran...I use that in ALOT of stuff lately b/c (tmi) post baby I was having some digestive issues and I don't like Metamucil the way my Husby does. I have a box of ground wheat bran and put it in alot of stuff...oatmeal, smoothies, muffins...1/4 cup has 7grams of fiber and I really love the flavor it adds!
-on goat's milk...I know that for alot of people it's not readily available like it is for me..it's available for me b/c my parents and I have dairy goats. More on that later though..I need to do a goat post to introduce the ladies to you all!
